Allergen Labelling
 
Traditionally, wine makers use egg white or milk derivatives for must and wine clarification or stabilisation. The efficiency of these natural products has never been questioned. The only drawback is that the protein constituents of these fining agents are allergenic. The 2007/68 Directive published on the 27th November 2007 obliges these producers to label their wine with the possible presence of traces of allergens. Casein in milk, egg albumin and lysozyme in egg are affected by this text. Time to adapt The Directive allows a time period for the wine industry to adapt to the new labelling system. The dead line, first scheduled on May 31st, 2009, has been postponed once again to June 30th, 2012. Indeed, the research conducted by OIV has shown that only traces of casein and egg albumin, used for fining wine, are left in wine after treatment. The Food Safety Agency must now validate these results.


Martin Vialatte Œnologie’s R&D department has been working on new fining agent products for many years. Through this research, alternatives to certain oenological products which are under attack by the labelling Directive can now be proposed, with the creation of the ProVgreen range:

ProVgreen Must clarifies musts,

ProVgreen White clarifies and refines white wines,

ProvGreen Red clarifies and softens red wines.

The Research and Development department keep testing various formulations in order to offer other allergen free options. Since 2008, Martin Vialatte Œnologie commercializes Polygreen, an allergen-free substitute product formulation to Polycase. Another allergen-free product, Deltaspeed AF, is also available for sale, as well as the allergen-free alternative to our casein product Casesol, named Clarisol. Among our latest new products are : • PRZ AF : casein-free substitute to PRZ • Polypresse AF : casein-free substitute to Polypresse • Qalisol : egg albumin-free substitute to Ovocol. Other current product developments are being tested so, in the upcoming future, Martin Vialatte Œnologie is able to propose even more allergen-free products.

The Martin Vialatte Œnologie Allergen Free product range has been rewarded by a Special Price for Innovation at the last Intervitis Interfructa Fair in 2010.
