This oak range for enological application is produced in France by ŒNOCHENE. Our range comprise an extensive range of oak wood fragments, which were carefully selected, dried and toasted to lend different wines varied aroma qualities.

The ŒNOCHENE range is sold in packaging designed to facilitate the use of the product and perfectly preserve the aromas.

 

The products of the range vary according to :

_ Their size: chips for an increased extraction of all oak aroma compounds; oak microstaves or stave segments for a controlled addition of sweetness and aroma notes (spicy, vanilla); mini-staves for the development of mouth structure and volume similar to barrel ageing.

_ The origin of the oak used: French (FR) or American (US) for the expression of matching aromas.

_ The degree of toasting with the qualities ŒNOCHENE COMPLEXITY, ŒNOCHENE SWEETY, ŒNOCHENE FRUITY and ŒNOCHENE HARMONY : ŒNOCHENE COMPLEXITY is a medium toast +. It confers complexity, opulent aromas to wines (soft oak, chocolate, caramel, ..) and sweetness. ŒNOCHENE SWEETY is a medium toast. It contributes sophisticated vanilla and fruity aromas, while conferring ample sweetness to wines. ŒNOCHENE FRUITY is a specific drying method without toasting, which underlines the fruitiness and structure of wines, prevents the development of sulfur off-aromas in musts and stabilizes the colour. OENOCHENE HARMONY corresponds to a very slow and very long toasting, resulting from an innovative toasting process that reveals and releases the macromolecular compounds of wood.
