VIAZYM® AROMA is an enzymatic preparation derived from Aspergillus nigerand concentrated in β-glucosidase activities to release glycosylated aromatic precursors. The absence of cinnamoyl esterase in VIAZYM® AROMA prevents the formation of volatile phenols.
