VIAZYM® CLARIF EXTREM is a liquid enzymatic preparation derived from Aspergillus niger and highly concentrated in pectinases. It helps to obtain musts with low turbidity and gives excellent results on altered grapes.
VIAZYM® CLARIF EXTREM is adapted to “amylic” processes, it allows to obtain very clarified musts. This enzyme is also indicated for cold stabilisation with the development of varietal aromatic characteristics. The absence of cinnamoyl esterase in VIAZYM® CLARIF EXTREM avoids the formation of volatile phenols.
