BACTOLYSIS LYSOZYME is a purified preparation based on lysozyme, an enzyme naturally present in egg white and extracted from it. BACTOLYSE LYSOZYME can be used to delay or block malolactic fermentation, as well as to block lactic acid pitting and bacterial stabilisation after malolactic fermentation.
