VIAZYM® ROUGE is an enzymatic preparation in microgranulated form, derived from Aspergillus niger. It degrades pectins and clarifies more quickly. This enzyme helps to obtain coloured and fruity red wines and also reduces vegetal notes. The absence of cinnamoyl esterase in VIAZYM® ROUGE prevents the formation of volatile phenols.
