CRISTAB-GC - Histoire Martin Vialatte

CRISTAB GC is a natural cellulose gum (E466) obtained exclusively from sustainably managed forests.
Thanks to its very specific characteristics concerning the degrees of polymerization and substitution, and thus its viscosity, CRISTAB GC is particularly suited and efficient to stabilize wines with regards to potassium bitartrate.


  • CRISTAB GC is suitable for white wines as well as base wines used for the production of sparkling wines.
  • To our current knowledge, this treatment is not recommended for red wines as it can lead to the formation of deposit.
